Because of its salt content, miso will keep indefinitely under refrigeration.
Well, that is very interesting and good news. The packages miso come in at my friendly favorite asian store, are so big and I can never use it all up. After about 6 months, I usually throw it out because I get nervous about it. This news has made my night - I am actually pretty happy right now knowing that it will last longer
:-)
I have had miso in my fridge for wayyyyy too long. But that's true with so much of my stuff in there!!! (And no, it's not a good thing...)
I know a woman who refrigerates peanut butter and olive oil, because she believes both can go rancid.
When you asked about miso , didn't you mean a poorly maintained cooler and not a refrigerator?
Great question! Indefinitely?! Awesome. I threw mine out too after awhile because I wasn't sure and wanted to be safe. I can also never use mine up quickly.
:P
